Banana bread is a family favorite. Previously, I would pick up a loaf or two at the pastry shop on weekends. COVID-19 changed all of that. With the family spending more time at home, I thought it a better idea to make our own. Moreover, the recipe for banana bread is quite simple and allows for variations. You can substitute the all-purpose flour with whole-grain flour and you can use almond milk, coconut milk, buttermilk, or plain water for the liquid. Tropical ingredients like bananas, coffee, and chocolate go well together. So, sometimes I include a dash of coffee or cocoa to enhance the banana flavor. Go ahead and use your creativity with varying ingredients to make a banana bread to your heart’s delight.

Ingredients: banana bread

  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1 cup brown sugar
  • 3 med-large ripe bananas
  • 8 tablespoons (1 stick) unsalted butter
  • ¼ cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp mixed spice
  • ½ cup chopped nuts (optional)

Directions

  • Step 1: Preheat oven to 350oF/180oc. (If you are using nuts, toast them in the oven for 10 minutes while the oven is pre-heating).
  • Step 2: Line a 8×5-inch loaf pan with parchment paper, and spray the inside with cooking spray, or greased with butter or cooking oil.
  • Step 3: Melt the butter in the microwave or over low heat on the stovetop.
  • Step 4: Place the melted butter and sugar in a large bowl and whisk until combined. Alternatively, cream the softened butter and sugar in a mixer until fluffy.
  • Step 5: Crack the eggs into the bowl and whisk until the mixture is smooth.
  • Step 6: Pour the milk and vanilla into the batter and whisk.
  • Step 7: Peel the bananas and add them to the bowl. Using the end of the whisk or a dinner fork, mash them into the batter until no more lumps remain, then whisk them into the batter.
  • Step 8: Add the flour, baking powder, and mixed spice into the bowl with the batter. Stir gently with a spatula until the ingredients are just barely combined and no more dry flour is visible.
  • Step 9: If you are using nuts, scatter them over the batter and, using a spatula, gently fold them in.
  • Step 10: Pour the batter into the prepared loaf pan and use the spatula to smooth the top of the batter.
  • Step 11: Bake for 50 to 65 minutes or until the top of the cake is dark brown with some yellow interior peeking through and a toothpick or cake tester inserted into the middle comes out clean. Begin checking after about 50 minutes and then every 5 minutes thereafter.
  • Step 12: Remove the pan from the oven and allow to cool. Cooling helps to solidify the loaf and makes it easier to remove it from the pan. When fully cooled, remove loaf from pan and slice.
