Bread Pudding provides a great opportunity to utilize left-over bread. Bread puddings are delicious aromatic cakes that are excellent both for dessert and breakfast. Ingredients for bread pudding

  • 500 grams (1.1lb) bread
  • 3 tablespoons sugar
  • 3 cups coconut milk
  • 2 tablespoons butter (melted)
  • 1 tablespoon vanilla essence
  • 1/4 cup raisins
  • 4 eggs
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon

Directions

  • Step 1: Preheat the oven to 375ºF (190°C)
  • Step 2: Break up bread and together with raisins soak in 2 cups coconut milk in a greased oven proof utensil
  • Step 3: In a bowl, combine sugar, cinnamon powder, allspice, eggs, butter and 1 cup milk, mix thoroughly – but don’t overmix.
  • Step 4: Pour mixture over the bread and raisins and allow to stand for 15 minutes.
  • Step 5: Bake for about 45 minutes or until pudding is nicely puffed, well browned on top or when a knife is inserted in the centre comes out clean.
  • Step 6: Allow to cool before slicing
