Bread Pudding provides a great opportunity to utilize left-over bread. Bread puddings are delicious aromatic cakes that are excellent both for dessert and breakfast. This recipe is very easy and the resulting pudding is more than worth the while. Once you’ve made your first bread pudding, it will be difficult not continuing doing so.

Ingredients for bread pudding

  • 500 grams (1.1lb) bread
  • 3 tablespoons sugar
  • 3 cups coconut milk
  • 2 tablespoons butter (melted)
  • 1 tablespoon vanilla essence
  • 1/4 cup raisins
  • 4 eggs
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon

Directions

  • Step 1: Preheat the oven to 375ºF (190°C)
  • Step 2: Break up bread and together with raisins soak in 2 cups coconut milk in a greased oven proof utensil
  • Step 3: In a bowl, combine sugar, cinnamon powder, allspice, eggs, butter and 1 cup milk, mix thoroughly – but don’t overmix.
  • Step 4: Pour mixture over the bread and raisins and allow to stand for 15 minutes.
  • Step 5: Bake for about 45 minutes or until pudding is nicely puffed, well browned on top or when a knife is inserted in the centre comes out clean.
  • Step 6: Allow to cool before slicing
