Ingredients

  • 1 bundle Callaloo (4-6 stalks)
  • 1 Tomato, minced
  • 1 small onion, chopped
  • 2 cloves of garlic, crushed
  • 1 Scotch bonnet pepper, stem removed
  • Coconut oil/vegetable oil
  • Salt (to taste)
  • Black pepper (to taste)

Directions

  • Step 1: Prepare your callaloo leaves. Rinse and cute off any dead leaves or hard parts of the stalk. Afterward, chop up the callaloo stems and leaves into bite-sized pieces. Set aside.
  • Step 2: Heat your oil then add garlic, tomato, onion and scotch bonnet to your pan. Sautee until fragrant adding splashes of water to prevent it from burning.
  • Step 3: Add your callaloo with a splash of water and cover it with a lid.  Allow to steam on medium heat for 3 minutes or until soft but not soggy.
  • Step 4: Toss with some salt and black pepper to taste then serve with fried dumplings or boiled yam and green banana.
