Gingerbread or ginger cake, is loved by many because of the aromatic flavor and pungency of ginger, the base ingredient. Gingerbread, which means different things in different cultures, generally refers to a “broad category of baked products, typically flavored with ginger” and other spices. Jamaican gingerbread is referred to alternately as a bread or cake. Some gingerbread recipes use molasses, primarily to achieve a moist dark brown texture. Ingredients – Jamaican gingerbread

  • 4 ounces fresh ginger, peeled and grate
  • 1¼ cup dark brown sugar
  • 100g butter
  • 2½ cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp ground mixed spice
  • 1 cup milk
  • 4 tsp baking powder
  • 2 eggs, at room temperature

Directions

  • Step 1:Preheat oven to 180°C / 350°F
  • Step 2: Grease and flour a cake tin.
  • Step 3: In saucepan, melt butter over low heat. Stir the melted butter in the milk and set aside 
  • Step 4: Sift together the sugar, flour, baking powder, cinnamon, and mixed spice. Set aside.
  • Step 5: In a large bowl, beat in the eggs one at a time, then stir in the grated root ginger and vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  • Step 6: Pour batter into prepared pan and bake in the preheated oven for 1 hour, or until a toothpick inserted into the centre of the cake comes out clean.
  • Step 7: Let cake cool in tin for 10 minutes before removing unto a serving plate.
