  • 1 lb. Pigtail
  • 1 Cup Red Kidney Beans
  • 1/2 Cup coconut Milk
  • 2 Sprig thyme
  • 2 Stalks scallion
  • 1 Green Scotch Bonnet Pepper
  • 10 Pimento Berries
  • 4 Cloves Garlic
  • 1/2 Cup Flour

Directions

  • Step 1: Remove the pigtails from the packaging and rinse thoroughly with fresh water. Place into a saucepan and add water to boil on high heat for 15 minutes. Repeat 2 or 3 times. The purpose of this step is to remove the excessive salt from the pigtails.
  • Step 2: Wash kidney beans and place into a pressure cooker along with the pigtails and 2 cloves of crushed garlic. Add water to pressure cooker as needed, cover and pressure for 25 minutes or until beans and pigtails are tender..
  • Step 3: Knead flour into a dough and break apart into small pieces. Roll pieces of dough between your palms to make spinners (dumplings).
  • Step 4: Transfer the pressured contents together with all remaining ingredients, including spinners (dumplings), into a saute pan.
  • Step 5: Cover pot and cook on medium-low heat for 20 minutes or until the stew has reached the desired thickness. Stir to make sure nothing is sticking at the bottom of the pot, all the time being careful not to burst the scotch bonnet pepper.
