Ingredients: Jamaican Stew Peas

  • 1 lb. Pigtail
  • 1 Cup Red Kidney Beans
  • 1/2 Cup coconut Milk
  • 2 Sprig thyme
  • 2 Stalks scallion
  • 1 Green Scotch Bonnet Pepper
  • 10 Pimento Berries
  • 4 Cloves Garlic
  • 1/2 Cup Flour

Directions

  • Step 1: Remove the pigtails from the packaging and rinse thoroughly with fresh water. Place into the saucepan and add water to boil on high heat for 15 minutes. Repeat 2 or 3 times
  • Step 2: Wash peas and place into a pressure cooker along with 2 pegs of crushed garlic and pressure for 20 minutes.
  • Step 3: Peel and wash the seasonings and place them in a bowl.
  • Step 4: After boiling the pigtails, drain and remove from the pot and place into the pressure cooker with peas.
  • Step 5: Add water to pressure cooker as needed, cover and cook on high heat for 30 minutes.
  • Step 6: After pressuring, check if peas and pigtails are cooked at least 3/4 way. If not, pressure some more.
  • Step 7: Transfer contents into a saute pan on medium-high heat.
  • Step 8: Add remaining ingredients, stir, cover and cook for 15 minutes.
  • Step 9: Knead dough for spinners, add to pot and cook for an additional 10 minutes or until stew has reached the desired thickness.
