- Step 1: Preheat the oven to 375ºF. Grease 16 muffins cups.
- Step 2: In a bowl, beat together the milk, vegetable oil, and eggs.
- Step 3: In another bowl, combine the flour, sugar, baking powder, cinnamon and salt
- Step 4: Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined – don’t overmix.
- Step 5: Fill each of the 16 muffin cups about 3/4 of the way full.
- Step 6: In a small bowl, combine 2 tablespoons sugar and 1 teaspoon of cinnamon. Sprinkle the cinnamon sugar mixture over the tops of the batter in the muffin cups.
- Step 7: Bake the muffins until a toothpick inserted in the center comes out clean, 13-15 minutes.
