Cinnamon muffins pack a huge flavor punch and are one of my favourite muffins. Cinnamon, one of the most popular spices worldwide because of its distinctive spicy-sweet flavor, provides a kick to cinnamon muffins. During baking, cinnamon muffins emit the most tantalizing aroma, making them irresistible. They are simple to make and while they make a great breakfast, these very scrumptiously delicious treats are also wonderful for snacks.

Ingredients Cinnamon Muffins

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tablespoons sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Directions

  • Step 1: Preheat the oven to 375ºF. Grease 16 muffins cups.  
  • Step 2: In a bowl, beat together the milk, vegetable oil, and eggs.
  • Step 3: In another bowl, combine the flour, sugar, baking powder, cinnamon and salt
  • Step 4: Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined – don’t overmix.
  • Step 5: Fill each of the 16 muffin cups about 3/4 of the way full.
  • Step 6: In a small bowl, combine 2 tablespoons sugar and 1 teaspoon of cinnamon. Sprinkle the cinnamon sugar mixture over the tops of the batter in the muffin cups.
  • Step 7: Bake the muffins until a toothpick inserted in the center comes out clean, 13-15 minutes.
