Pineapple sauce is a convenient way to add flavor to a variety of foods. This versatile and delicious sauce can be brushed over grilled, broiled, jerked, or roasted meats, poultry or seafood. It can also serve as a dipping sauce or used as a base for stir-fry dishes. Poured over ice cream, the taste is mouth watering. I have added a little white overproof rum to the recipe to add some oomph to it. You can choose a different brand of rum if you do not have any white overproof rum available. Whatever brand rum you use, the flavour of your pineapple sauce will zing.

Ingredients: Pineapple Sauce

  • 16 ounces unsweetened pineapple juice
  • 1½  pounds pineapple chunks
  • 1/3 cup packed brown sugar
  • 2 tablespoons unsalted butter
  • 2 tablespoons rum
  • 1 teaspoon lemon/lime zest

Directions

  • Step 1: Pour pineapple juice, sugar, and lime zest in a sauce pan over medium heat and bring to simmer while stirring.
  • Step 2: Add pineapple chunks and bring to a boil, stirring occasionally.
  • Step 3: After about 10 minutes, add butter and rum and stir until butter is melted.
  • Step 4: Turn off heat and allow sauce to chill.
